A refreshing way to enjoy matcha with a hint of citrus

It’s clean, refreshing, and slightly addictive — a drink that feels light, yet quietly layered.

Enjoy it warm for a softer expression, or cold with ice or sparkling water for a more refreshing experience.

What is yuzu?


Yuzu is a traditional Japanese citrus fruit known for its unique aroma.

Compared to lemon or lime, yuzu is:

  • more fragrant and complex
  • slightly softer in acidity
  • highly aromatic, especially in the peel

In Japan, yuzu is often associated with winter and used in cooking, drinks, and even baths.
In New Zealand, it is still relatively uncommon — but even a small amount adds a distinctive citrus note.

Recipe (subtle and refined)

  • 160 ml water
  • 20 ml prepared matcha
  • 1/8 tsp 100% yuzu juice (approx. 0.6 ml)

Tip
Use only a small amount of yuzu
to enhance the aroma without overpowering the matcha.

Note about the yuzu juice  

The yuzu juice used in this recipe is a 100% bottled yuzu juice purchased from a Japanese grocery store.
It’s not freshly squeezed — this type of bottled yuzu juice is commonly available at Japanese supermarkets in New Zealand.

 

 For a more noticeable citrus flavour

  • 160 ml water
  • 20 ml prepared matcha
  • 1/4 tsp yuzu juice

This version gives a brighter, more refreshing citrus profile.

Adding sweetness (optional)

Both matcha and yuzu are delicate in flavour.
If adding sweetness, choose something that doesn’t dominate.

  • Clover honey
  • Kamahi honey
  • Rewarewa honey

Start with 1/2 to 1 tsp and adjust

⚠ About Manuka honey

While highly valued for its health properties,
Manuka honey has a strong, medicinal flavour.

It can easily overpower both matcha and yuzu,
so it’s not the best choice for this recipe.

No yuzu juice? (Alternative)

If fresh yuzu juice is unavailable, you can use yuzu powder instead.

  • A small pinch (approx. 0.2–0.3 g)

 Start small — it can become bitter if overused

Variations

  • With sparkling water → lighter and more refreshing
  • With hot water → softer and more comforting

This makes it suitable year-round

To finish

Garnish with fresh apple mint.
It adds a subtle aromatic lift and enhances the overall freshness of the drink.

Final note

Too much yuzu can easily mask the umami of matcha.
Start small, and adjust gradually — balance is everything in this drink.
